Each province has its own specialties and cuisine, and every major city has its special dishes. Some people divide Chinese cuisine into four major areas: Shantung, Szechuan, Kiangsu and Kwangtung. It can also be divided into three large areas: the areas of the Huang He river, the Yangtze river and the Pearl river.
