China's huge population, spread out over a gigantic area with many mountain chains and rivers, has developed many different cooking styles during its rich history.
Each province has its own specialties and cuisine, and every major city has its special dishes. Some people divide Chinese cuisine into four major areas: Shantung, Szechuan, Kiangsu and Kwangtung. It can also be divided into three large areas: the areas of the Huang He river, the Yangtze river and the Pearl river.
